What is Thornless Artichoke?
A special variety of artichoke which was bred to have no thorns. Our crop as shown here have a beautiful purple cast to the leaves (even more so as they age). This variety was hybridized in the 1970's at Stanford University. The flavor is the same as with any globe artichokes but without the pesky thorns.
How To Prepare
There is no need to snip the tips off the leaves as you probably do with the regular artichoke varieties. Simply rinse well in running water then use according to your favorite recipe. If you are steaming or boiling the artichokes make sure to add a little lemon juice or vinegar to the water to help prevent the artichoke from browning.
Substitute for Thornless Artichoke
Fresh or frozen globe artichokes
Equivalents
1 small= 2 to 3 oz. 1 large = 15 to 20 oz. about 1 first course serving
