What is Tamales?
A Mexican dish that dates back to the Aztecs. A tamale is a composed of a layer of corn dough typically with some type of filling from beans, to cheese, to meats or even raisins that is wrapped in a corn husk, banana leaves or even parchment paper. The little bundles are tied closed and steamed in a "tamalera" for about 2 hours. The bundles are unwrapped and served warm with or without a sauce, depending on the region of Mexico where they are served.
