Sujuk is a spicy dried Middle Eastern sausage usually made from beef (and sometimes up to 3 types types of meat) and various seasonings such as garlic, cayenne, cumin, paprika and allspice. The sausage is fully cooked so it can be eaten sliced, cold but more commonly it would be fried and eaten with eggs. It can also be minced, and added to cooked vegetables.
