What is Staka?
Staka
is a thick butter made from goat's milk used in cooking in Crete. To make this you use fresh goat's milk and even a combination of goat's and sheep's milk. The fat cream layer is skimmed from the milk and refrigerated. Later the fat is set out in the sun until butter starts to form. Alternately you can heat the butterfat and add about 1 1/2 tablespoons of wheat flour to the mixture per 2lbs of butterfat.
