Squids are cephalopods primarily consumed in Japan and in the Mediterranean. Both the tentacles and the body are eaten, sometimes in soups or stews, sauteed or fried. Ideally the meat should either be cooked very quickly or simmered for a long period of time to avoid a tough, chewy consistency.
Squid is available fresh or frozen. Always purchase from a reliable market with good turnover. Squid should be used upon purchase or freeze immediately.
