Sottocenere al tartufo cheese is an Italian cow's milk cheese infused with slivers of black truffles. The cheese comes from the northern region of Venice. The name translates to "under ash" which refers to the layer of ash that covers the cheese as it ages. The rind covered with coriander, cinnamon, nutmeg, licorice, fennel, anise, cloves and truffle oil.
This cheese is excellent on your cheeseboard served simply with a baguette or add it to salads or pasta dishes. To add a wine, select a dry Prosecco or any medium-bodied red wine.
