The sopes press is a small cooking tool made specifically for making sopes. The sopes press looks a lot like a toritlla press but smaller with an "inset" area.
Masa is placed between the two plates then the lever is pressed down to form the sopes. This creates a round block of masa with nice straight sides and even thickness.
A glass is then used to make an indentation in the masa. The sopes are then fried and drained before use. Sopes are rounds of cooked masa topped with beans, chorizo, peppers, onions as well as other savory ingredients.
You can purchase aluminum or cast iron presses. Look for them in Mexican markets or you can purchase them online as well.
