Skirt steak is a thin, flavorful cut of meat that is typically marinated then pan or grill seared. It can also be broiled. The cut comes from the "short plate" which is also where short ribs are cut and also the source for ground beef. This cut is referred to as "inside skirt steak" or "outside skirt steak" but you'll most likely see it in the store labeled just as "skirt steak" and sometimes "fajita meat". The steak is used to make "philly cheesesteak" sandwiches.
This is the cut you'd use for the classic Carne Asada recipe.
