What are Scallions?
Scallions
are a green onion that has been harvested during the early stages of growth when it is smaller in diameter, pear-shaped, and long-stemmed. In Britain, the onion is typically referred to as spring onion, while other countries often call it a green onion. The spring onion is served in soups, salads, stir-fry dishes, on kebabs, and in vegetable dishes.
Substitute for Scallions
Don't have scallions? Here are the best substitutes:
Substitute equal amounts of green onions
OR - Use 3-4 cups chopped chives per bunch scallions
OR - Alternatively use 3-4 cups chopped leeks (white and light-green portions only).
OR - You can also substitute equal amounts of shallot (flavor will be a little more delicate)
