What is Sauerkraut?
A well-known German condiment, sauerkraut means "sour cabbage". This is a fermented product made from shredded cabbage and seasonings. While we credit this sour side as a German invention it really dates back to China when cabbage was fermented with rice wine.
Sauerkraut is traditionally served with various types of sausages but it pairs well with roasted pork and other meats. Purchase the condiment in jars in most grocery stores or fresh packed (in the produce section) in stores like Whole Foods market.
Substitute for Sauerkraut
Kimchi (spicier) Pickled red cabbage
