Sap Sago cheese is a hard, almost fat free, pungent, grating cheese made only in the mountains of the Canton of Glarus, Switzerland. It is made either with non-fat milk or buttermilk. It is produced in small blunt-end cones and is flavored with either blue fenugreek or meliot which causes the cheese to be a light green color. It is excellent grated on top of potatoes, apple pies, pasta or salad. You can also grate the cheese and mix it with softened butter for a great spread.
