What is Samp?
Samp is hominy which has been very coarsely ground or broken into pieces. Samp is prepared in the same way as hominy and used as a starchy side dish or cooked with meats or vegetable stews. The only difference between samp and grits is that grits are ground finer and more uniform. Samp was typically eaten in the Northern part of the U.S. as opposed to grits which are synonymous with the Southern part of the U.S.
