Salsiccia is an Italian pork sausage that is not smoked or cured. Salsiccia is available in links or in bulk and must be cooked before eating. In the U.S. you find this product in two versions, Hot Italian Sausage or Mild Italian Sausage. The only difference between the two is that the hot version includes hot pepper flakes. In addition to the pork sausage you can typically find turkey Italian Sausage (mild or hot) in most well-stocked grocery stores or meat markets.
One of my favorite uses for Italian sausage is to grill them with some Anaheim chiles then serve it on a French roll with Provolone cheese melted on top. Pictured above are pork hot Italian sausage and peppers ready for the grill.
