Safflower oil is a clear, flavorless oil, made from the seeds of safflowers. Safflower is high in polyunsaturated fats which makes it a good choice for salad dressings. It also has a high smoke point (450F) so it is a good candidate for an oil to use for frying.
Safflower oil's fat content is 9% saturated, 76% polyunsaturated, and 15% monounsaturated.
This oil is easy to find in most grocery stores.
