Roncal cheese comes from the Navarra region of the Spanish Pyrenees Roncal Valley. This raw sheep's milk cheese dates back to the thirteenth century. The cheese is ripened several months to develop a rustic, nutty flavor with a moist, smooth texture. This was Spain's first cheese to obtain D.O.C status.
