What is Rillettes?
Rillettes are from France, a mixture of traditionally pork but also chicken, duck, fish and other types of fowl. The meat is chopped into small pieces, salted and slowly simmered in fat until the meat falls apart. The mixture is then ground or mashed into a smooth paste and stored in crocks or jars. The paste is used as a spread on bread.
This mixture is best made from scratch but commercially prepared versions are available as well at gourmet markets and online.
