Rice vinegar is a mild flavored vinegar with reduced acidity used extensively in Asian cooking. It is a good vinegar to use in salad dressings. Available in any Asian grocery store and many well-stocked grocery stores. Rice vinegar is ranges between 4-4.3% acidity which is lower than apple cider vinegar at about 5%.
Although referred to as "rice wine vinegar" they are not made from rice wine but simply from rice.
