Red spring onions have a distinctive red color but are otherwise the same as the typical green spring onion. You can find this onion in your grocery store staring around February and lasting until June. They may be available even later in some areas.
Use this onion in any recipe that calls for green onions. They are excellent in salads, use for making onion jams, or in savory dishes such as with pasta or in a quiche.

Just like the green spring onion, the red portion of the onion, as well as the tall greens can be eaten. Just wash the onion, trim off the root end and use per your recipe.
