What are Red potatoes?
Red potatoes
are boiling potatoes with thin red skins and smooth, dense flesh. These potatoes work well for salads or gratins and make a good "smashed" potato too. Red potatoes are available year-round and are found in most any grocery store.
Substitute for Red potatoes
If you don't have red potatoes then the best substitutes include:
Yukon Gold potatoes which are slightly yellow in color but have a similar flavor and texture.
OR - Use another thin-skin potato such as white potatoes or other yellow potatoes.
OR - You could use a russet potato but they aren't good boiling potatoes.
