What is Rabbit?
Domesticated rabbits bred for their lean white meat. Young rabbits weighing 2 1/2 pounds or less are the most tender and flavorful. The meat toughens substantially as the rabbit ages. The young tender rabbits can be roasted or grilled but the older meat must be braised or will be very tough. Purchase rabbit meat at your local butcher shop.
