P'tit Basque cheese is made from pure sheep's milk and has a rather dry texture and an earthy, nutty flavor. This cheese has an inedible rind. This is a newer "factory" cheese which was introduced in 1997 and is produced in the Pyrenees Mountains but still maintains an artisinal quality.
Serve P'tit Basque with fresh peach slices, a crusty French bread, and some thinly sliced Serrano ham and even some black cherry jam. Serve a Cabernet Sauvignon.
