A plancha is a Spanish term for a cast iron griddle used to cook meats, or fish, or even vegetables. These griddles are sometimes reversible with a one smooth side and one with ridges. The term can also be used for large commercial griddles. These double sided griddles are popular in Mexico and other Latin countries such as Colombia. You can find these griddles in round or rectangular shapes.
The plancha is typically used over a gas burner but it can be used on top of an outdoor BBQ as well. The griddle should be gradually preheated before use. Some planchas come with a non-stick coating and others you would need to season just as you would any cast iron pan.
Once the griddle is preheated you can add a little oil as needed then cook your food on top.
