What is Pitahaya?
The fruit of a night-blooming cereus plant (a type of cactus) believed to be a native of Mexico. The pitahya is striking looking with its bright pink, almost magenta exterior flesh and green "leave" looking appendages. On the inside the pitahaya is white with a myriad of tiny black seeds.
The flavor is delicate, almost pear like with a faint floral taste and the tiny seeds are crisp like a kiwi fruit. The fruit is in season around August and September and can be served chilled, sliced in half and eaten with a spoon. The fruit peels away easily from the skin and is firm enough to be cut into sections and served as part of a fresh fruit salad. The pulp can be blended into a cool drink as well.
