What is Pheasant?
A plump game bird that originated from Asia. Not always easy to find in grocery stores but there are several good online sources. Pheasant can be roasted or pan fried. The juiciest and most tender meat comes from young, female birds. Old hens and young cocks are very lean and need to be cooked with added fat and requires a moist cooking method.

Roast goose (larger, greasier) OR quail, much smaller or Cornish Game Hen (larger but not greasy like Goose)
