Paneer is an Indian fresh, dry curd cheese similar to unsalted pressed ricotta cheese. The cheese is a primary source of protein for vegetarian Buddhists. Use paneer in curries or wrapped in dough and fried.
Additionally, the cheese works well in stir-fries because it does not melt. In fact, it can be cooked on a griddle or grill too. It is also used in sweet dessert recipes. The fresh cheese is available in blocks or cubes in Indian and Asian markets.
