What are Pancakes?
A round cake (technically a bread) ranging from small to large, thick to thin typically eaten for breakfast or brunch. Pancake batter is made from wheat or buckwheat flour, eggs, sugar and vegetable oil and milk. The batter is poured onto a hot, greased griddle or pan, browned on one side until little bubbles appear then turned to brown the opposite side.
Pancakes may be served topped with butter and syrup or a simple sprinkling of powdered sugar. More extravagant recipes top pancakes with fresh fruit and even whipped cream.
Other types of pancakes include thin French crepes and Asian pancakes used in mu shu pork.

(Dough For Tortillas And Tamales) The Nahuatl word, masa, means "dough" in English. The masa is made from field corn, called maiz blanco or "cacahuazintle" [kaw-kaw-WAH-SEEN-til] which was dried, treated with a lime water solution, then ground. This page will describe the process of making masa. The masa can then be used for corn tortillas or for tamales.
