Oyster mushrooms are fluted and graceful looking mushrooms (Pleurotus) that range in color from soft brown to gray. They are best when cooked. Oyster mushrooms have a delicate, mild flavor and velvety texture.
Like most mushrooms it it best to eat them as quickly as possible but you can store them for up to 5-7 days properly refrigerated. You can also buy dried oyster mushrooms which are very good for soups.
You may not find these in your local grocery store but thankfully many Farmer's Markets have a mushroom grower. You can also purchase them online at Northwest Wild Foods.
