What is Oignon pique?
A method used to extract flavors. To prepare an oignon pique, peel an onion and trim off the root end. Attach one or two dried bay leaves to the onion using whole cloves as pins. Simmer in stock or milk to extract flavors. The onion may also be prepared with cloves only, depending on the recipe requirements.
