What are Oats, quick cooking?
Regular rolled oats are steamed, rolled out then flaked. Quick cooking oats are similar but very thin so they take a very short time to prepare; about 3 to 4 minutes. You can use quick cooking oats in cookies. Don't confuse quick cooking oats with "instant" oatmeal which is a pre-cooked product and does not work well for baking.
Substitute for Oats, quick cooking
Regular or rolled oats OR equal amounts of steel cut oats (all have longer cooking time)
Equivalents
18 oz. pkg. quick cooking oats = 6 cups uncooked, 10 1/2 cups cooked
