New potatoes are any variety of potato that is picked young and tend to be less starchy with very thin skins. New potatoes can be cooked whole either boiled or roasted. New potatoes hold together well when cooked so they make a good salad potato. These potatoes are typically in season from early spring through early summer and they can be found in most grocery stores and some farmer's markets.
