Morel mushrooms (Morchella Esculentia) have short, thick, hollow stems, topped with sponge-like pointed caps, resembling honeycombs. The mushroom is sometimes referred to as "sponge mushrooms" because they do look like little natural sponges. Morels may be tan, yellow or black in color and produce a rich, nut-like flavor and woodsy fragrance. Morels last 10-14 days. Keep refrigerated in paper bags.
You may find morels occasionally in your local grocery store or look for them at your farmer's market. The mushrooms are wonderful simply sauteed in butter.
