Montcabrer is a semi firm goat cheese from Catalunya. The cheese is bathed in vegetable oil and charcoal and aged 60-90 days. The rind is grey, as surface mould mingles with the charcoal. The texture is creamy and the sweetness of the milk which comes from the Murciana goats. This cheese is earthy, full flavored and slightly tangy at the finish. Serve with a Grenache.
Pair this cheese with drier white wines - especially those with citrusy notes. Tempranillo works nicely as well. MontCabrer pairs beautifully when served with fig and almond or date and almond cake.
