Moliterno sheep cheese also known as Canestrato and even Incanestrato is dry, sharp and slightly salty, a typical Pecorino from Sardinia. It can be purchased in various stages but the dry aged version is used in any application that calls for a good Pecorino cheese. You can use it on your cheeseboard as well with rustic crusty bread, olives, thin slices of salami and serve a "big red" wine.
The cheese can be difficult to track down given its multiple names. Additionally you might see this cheese infused with truffles. Look for it in a good, well-stocked cheese shop.
