What is Miner's lettuce?
These succulent leaves were named "miner's lettuce" because they were eaten by the California gold miners. Miner's lettuce is a native plant that grows in many hillside regions of the west coast. To use just collect the greens, rinse well and use like lettuce. Use the tender leaves raw in salads. The leaves taste similar to spinach. You can steam the leaves and stems and eat like any green.
