What is Marsala?
Marsala is a fortified wine with a warm nutty flavor and is served as an aperitif and used in cooking as well. The wine originates in Sicily. One well known recipe that uses Marsala is Zabaglione, a dessert made with egg yolk, sugar and the wine. Other classic dishes include Veal or Chicken Marsala where the wine is included in the pan sauce.
Substitute for Marsala
Use Madeira, Sherry OR a mixture of equal parts sherry and sweet vermouth
