A large tree (Eriobotrya japonica) which originated in China bears bright yellow fruit similar to an apricot but with less flesh with one to four large shiny brown pits. This tree has migrated throughout the world and the fruits are eaten in the Middle East, Japan, China and even California. Peeled and pitted fruit can be used in pies, tarts, jams, jellies and chutney. The fruits are small so a lot of effort is involved in using them in any quantity. They are a good fruit to just eat out of hand. Loquats are distantly related to the apple and have a high pectin content.
The loquat flavor is tart and slightly citrusy. The cut fruit browns quickly so it's a good idea to place the fruit in a bowl of water with a little lemon juice. Drain fruit before use.
