Persian limes are the large variety most commonly found in grocery stores in the U.S. Large and juice with a tart flavor. Use in beverages as well as desserts and salsas. The lime peel can be made into "knots" to garnish bar drinks. Both the zest and the juice is used. The Persian lime is a cross between a Key lime (true lime) and a lemon.
