The Kukui nut (candlenut) is an Indonesian waxy nut that looks similar to a large hazelnut. The nut is used for the flavor as well as a thickener. Typically the nuts are ground before use and should never be eaten raw. In Hawaii they are referred to as kukui nuts. The nuts are roasted, ground and mixed with salt to make a condiment called "inamona". Inamona is eaten with sushi.
