What is Kosher salt
Kosher salt
is an additive-free coarse-grained salt used in the production of Kosher meats to draw blood out of the meat. The salt is also preferred by some chefs because it disperses more readily. By nature of it's "flake" texture it melts easily and is lighter (less dense) than table salt. Use about 1/4 less salt than called for in a recipe.
Substitute for Kosher salt
If you need a substitute for Kosher salt you can use
>>>Fleur de sel (use half as much)
OR> Coarse sea salt put through a salt grinder
