Kinome is the small serrated leaves of the prickly ash tree are used as a garnish and a flavoring in Japanese cooking. The prickly ash is the same plant used to make Sansho powder and even the traditional Japanese surikogi is made from the same tree.
Kinome leaves have a minty aroma and flavor but distinguished by that lingering heat of the prickly ash. Look for this interesting ingredient in Japanese markets.
