Italian parsley or flat leafed parsley is a garden herb used to flavor sauces and other dishes and is sometimes used as a garnish. It differs from the curly leafed variety in that it provides a more intense flavor. The Italian parsley is the preferred parsley for cooking while curly leaf parsley is used primarily for garnish or decoration.
Other parsley relatives includes the aromatic herb "cilantro" which can be an acquired taste and Chinese parsley. Chervil is also a relative and is one of the ingredients in the French fines herbes mixture. Italian or flat-leaf parsley is easy to find in most any grocery store. It's also an easy herb to grow in your herb garden or even in a small pot in your kitchen window.
