This is the sauce we make whenever I make prime rib.
1 cup heavy cream, whipped to soft peaks form 1 heaping tablespoon (or more to taste) freshly peeled, grated horseradish** 1 juice from one, whole fresh lemon salt and pepper to taste 1/8 cup freshly chopped chives
Combine the whipped cream in a small bowl then gently fold in the additional ingredients. **If you don't have fresh horseradish you can use about 3 tablespoons of bottled, prepared horseradish which you've drained through a fine sieve to remove some of the vinegar flavor. Top the sauce with chopped fresh chives before serving.
This is a simple sour cream / mayonnaise version.
1/2 cup sour cream 1/2 cup mayonnaise 1 tablespoon prepare horseradish 1 teaspoon lemon juice 1 teaspoon Dijon mustard 1/4 teaspoon salt 1/4 teaspoon pepper 1/8 cup fresh chopped chives or parsley Combine all ingredients in a small bowl except chives. Refrigerate until ready to use. Place the sauce in a serving dish and top with the fresh chopped chives or parsley.
