Garrotxa cheese is a goat's milk cheese with a super-fine rind originally produced only in the Garrotxa region of Catalonia. The interior of the cheese is quite white witha creamy texture that tastes nutty and slightly herbal due to the plants eaten as the goats graze. Garrotxa melts very easily so it works well on sandwiches but it is stellar on your cheeseboard with fresh fruit, a hearty multi-grain crusty bread, cured ham (Serrano would be a good choice) or a nice salami. For a wine, select a Rioja.
