2 heads garlic
1 tablespoon olive oil
Preheat oven to 300F
Remove papery leaves from the outside of the garlic but keep the heats intact. Place garlic in an ovenproof dish. Drizzle with the olive oil. Cover dish and bake for 1 1/2 hours.
Remove the garlic from the oven and allow to cool. Once cool, squeeze the cloves into a small bowl. Mash the cloves with the back of a fork. Use immediately or store the garlic paste refrigerated in a small jar with a tight fitting lid.
