What is Galanga?
Closely related to ginger, galangal root is used in Southeast Asian and Indian cuisines. It can be found as a key ingredient in Thai curry pastes. Look for fresh galangal roots in Asian markets. The root is also available in dried powdered form but very little flavor is retained.
