Fines herbes is a famous herb mixture from Provence, France which includes a combination of finely chopped chervil, tarragon, chives, and parsley. Other additions that may be included are marjoram, savory, Burnet, and watercress. Many commercial brands are available with slight variations of the ingredients. These pungent herbs should be added to the dish right before it is served so the flavors don't have time to dissipate.
When commercially prepared this herb combination does not have a very long shelf life. Purchase in small amounts and replace it at least every 6 months.
