Dawadawa is the fermented seed of the Parkia biglobosa tree, also known as the African locust bean tree. The pungent, almost cheese-like aroma adds a musky, cocoa flavor to African dishes such as fakoye.
In African markets the seed is sold whole or more popularly, in hand-formed balls about the size of a golf ball. The balls would be placed in a simmering pot with other stew ingredients. This seed is difficult but not impossible to find in the U.S.
