Creme Chiboust or Crème Saint-Honoré is crème pâtissière which has been lightened with an Italian meringue then flavored with either vanilla, or numerous other flavorings such as chocolate, praline or even grated orange zest. The creation was an invention that dates back to the 1800's by Chef Chiboust.
The filling (creme chiboust) is used as a filling for the famous Saint Honore cake. It can also be used in cream puffs or other pastries.
A simple alternative for Creme Chiboust is chantilly cream (less complex in effort and flavor).
