What is Cranberries?
A dark red berry related to the blueberry. This berry that most of us only think of at holiday times is actually native to the northern part of the U.S. Grown in bogs the berries are harvested then most are cooked and processed. The berry is quite high in vitamin C. Use for sauces, baked goods, and cereal. Store raw whole berries refrigerated in a tightly sealed container for up to 2 months or freeze up to a year.
Substitute for Cranberries
Use frozen if fresh is unavailable OR Lingonberry (very similar flavor, same family)
Equivalents
1 quart fresh cranberries = 6 to 7 cups cranberry sauce
6-oz pkg dried = 1 1/3 cups
