Quick Find:
Costeno amarillo
What is Costeno amarillo?
Costeno amarillo
is a shiny, amber colored chile pepper related to the guajillo. The peppers grown in the Oaxaca and Guerrero region of Mexico have a slightly citrus, crisp flavor and used in moles, soups and stews. The chiles are 2 - 3" long and about 1" wide across the top, tapering down. (Amarillo means "yellow" in Spanish) The heat is about a 4 on a relative heat scale of 1-10 which is similar to the heat of a guajillo chile. The costeno rojo is about twice as hot.
Chile plants are available at
Cross Country Nurseries
. These dried chiles are available at some specialty markets and online at the
Spice Trekkers
.
Substitute for Costeno amarillo
A good substitute for costeno amarillo is the Onza Amarillo but probably equally difficult to find. If you're trying to make a yellow salsa then it's probabably best to wait until you can find the proper chiles.
